Veggie Thursday!
Veggie Thursday occurs on every Thursday of the calendar year- regardless of holidays. On Veggie Thursday, we all make an extra effort to seek out a serving or two more of veggies then we usually eat. This will vary per person. Each week I highlight a veggie and give you a recipe from one of my clients. This could be you- so email, Facebook, or Twitter me your favorite healthy and delicious veggie recipe!
This week's Veggie Thursday Recipe comes from Brian A. in Los Angeles. Brian's recipe is also excellent for kids!
"Hey Kristin,
Well, you know I don't like vegetables, so this is what I do: I take the nastiest veggies I can find (because they are usually the most nutrient rich), in this case kale (make sure it's dry, can't have any moisture on it at all) and broccolini. I toss them with a little bit of olive oil and sea salt. I distribute them evenly on to separate cookie sheets and bake them at 400 degrees for 10 or 15 minutes. It's like eating potato chips it's so good. Some of the nutritional value may be cooked out of the kale, but the broccolini needs the heat to allow the nutrients to be digested, so it's an even trade. Nutritious and delicious."
