Vegan Quinoa Stir Fry

Ingredients:
1/2 cup Asparagus
1/2 cup Bell Peppers
1/4 cup Chopped Carrots
1/4 cup Onions
1/4 cup Mushrooms
1/2 tsp Extra Virgin Olive Oil
1/4 cup veggie Broth (Vegan, Fat free, Gluten Free)
1/4 tablespoon Ginger
1/4 tablespoon Garlic
1/8 tablespoon mustard seeds
1 Serving Quinoa
Optional: Add fresh Dillweed, and parsley

Directions:
Cook the Quinoa
Add 1/4 cup of Quonia to 3/4 cup boiling water. Bring to a boil, reduce heat to simmer and cover for 20min. You can also cook the Quonia the day before, or use left over Quinoa.
Cook the vegetables
Add 1/8 tablespoon of Olive oil to pan, add mustard seeds. Add onions and cook until transparent.
Add remaining vegetables, and chicken broth, olive oil, garlic, and ginger. Cook vegetables until slightly crunchy, or to cook more cover and let sit.
Once vegetables are done, add Quinoa, and fresh herbs such as parsley and dill.
Remove from pan and enjoy.
